1/2 c. raw or organic butter
3/4 c. agave or raw sugar
1 free-range, organic egg
1 tsp. gluten-free almond extract
3 1/2 c. Pamela’s Baking mix
(or other gluten-free flour blend, just be sure to add some baking soda as well)
*Mixt first 4 ingredients. Add baking mix 1/2 cups at a time. Mix into balls and place on a greased baking sheet. Bake at 350 degrees for 14-17 minutes, until golden brown.
