Lori you requested a crepes recipe using Pamela’s Products that don’t fall apart. I use this recipe at least once a month and love it! Just make sure the pan isn’t too hot and that it is well oiled. Sorry the picture isn’t great. Also, my hubby made these ones for my birthday!!! So sweet! 🙂
1 cup Pamela’s Baking & Pancake Mix
1-1/3 cup water
1 cage-free, organic egg (large)
1 tablespoon coconut oil
1/4 tsp. vanilla and nutmeg (optional, but makes them taste really nice)
*Mix all ingredients together. Batter will be very thin. Preheat crepe pan or a round fry pan. Be sure to generously oil or butter the pan before beginning to cook crepes. Pour 1/4 to 1/3 cup of batter (depending how big you would like them) into skillet and quickly rotate pan in circular motion to disperse the batter into a thin, even coat.
