Burritos are something my sisters will tell you was one of my all time favorite lunches as a kid and they are right! I just love the comfort tortilla wrapped around delicious ooey, gooey filling. Put a dollop of ranch and ketchup by its side and you will have me drooling. It is one of those simple things that really does seem hard to find good and gluten free. I recently tried EVOL’s chicken and shredded beef gluten free burritos and they were really good.
Chicken- This dairy free, gluten free burrito is full of 10 grams of fiber. It is definitely ooey and gooey with tender chicken braised in a sweet guajillo chilé sauce, pinto beans, rice and roasted corn salsa then hand rolled together in an delicious gluten free tortilla that is reminiscent of a flour tortilla.
Shredded Beef- This delicious burrito also has 10 grams of fiber which I LOVE and it is dairy and of course, gluten free. Tender shredded beef, pinto beans, rice and roasted corn salsa are hand rolled into a tasty gluten free tortilla. This burrito has a bit of a kick with spice which I like. Don’t worry, it isn’t too spicy.

Shredded Beef Enchiladas in 5 minutes
6 EVOL Shredded Beef burritos
1 c. gluten free shredded cheddar cheese
2 c. gluten free canned enhilada sauce
3/4 c. gluten free sour cream
1 can green chilies, diced
*Unwrap burritos and lay them in a baking dish. In a bowl, combine enchilada sauce, sour cream and diced green chilies. Smother burritos in mixture. Cover with cheese and bake at 350 degrees for 30-40 minutes or until cooked through. Enjoy hot!
