This easy gluten-free holiday spiced bread pudding with buttermilk syrup is sure to please your Christmas morning crowd. Enjoy an old fashioned classic but without the gluten. For this dish, I used Udi’s gluten-free multigrain bread. It worked great both for flavor and texture. The dish alone isn’t too sweet but with the rich buttermilk syrup, you can bump up the sweetness as much as you would like.
- 1 loaf Udi’s gluten-free multigrain bread, minus 2 slices
- 2/3 C buttermilk
- 2/3 C milk
- 1/2 C sugar
- 6 eggs
- 4 T butter, melted
- 1 tsp. allspice
- Syrup: 1/2 C butter, 3/4 C sugar, 1/2 C buttermilk, 1 tsp. gluten-free vanilla & 1 tsp. baking soda
- Preheat oven to 350°. Cut bread into 2 inch cubes and arrange in an 9×13 pan. Combine remaining ingredients and pour over the bread. Bake at 350° for 45 minutes or until toothpick inserted comes out clean. To make the buttermilk, combine the sugar, buttermilk and butter. Once it begins to boil, remove from heat and whisk in vanilla and baking soda.

I have to say that the lemon muffins are one of my favorite products but I also love their frozen pasta meals, lasagna and pizza. Each makes a quick and delicious gluten-free meal in a hurry.
