The best part about this blueberry lemon cream pie with granola crust is that it’s really simple to put together. This is a great one for the kids to get in the kitchen and help you with since there are only a few simple steps. My son especially loves to cook and wants to be a chef when he grows up. This dessert is one that even he can make with just a little help from mom.
I love pies but sometimes it’s fun to change up the crust of you something a little different. You can use things like a traditional piecrust, graham crackers, crushed cookie crumbs or even crunch cereal. I love granola because it adds a bit of a healthy flare but also has just the right amount of fat to pull the crust together the way it should be. We chose to use Bakery on Main Organic Happy Granola because it’s crunchy and has just the right sweetness. It’s also full of fantastic whole grains like sprouted millet & quinoa.
