This gluten-free cherry almond danish is literally one of the best pastries you will enjoy. My friend Ashley first introduced me to her version before I got diagnosed with celiac disease. I was so smitten by her out of this world danish that we just had to convert it to a gluten-free recipe. Adding in cherries elevated the flavor even more. I’ve always thought cherry and almond make a fantastic pair. From the beautiful fragrance to the taste they couldn’t be better married together.

This can be served as a breakfast or dessert as it’s not too sweet but still full of fresh flavors. The cherries are especially delicious during the summer. Rather than using water where it calls for in this recipe I decided to add the Rainer cherry Dry Sparkling soda. I really wanted the cherry flavor to be infused throughout the pastry rather than just as a garnish on top. Serve it up with the Rainer cherry Dry Sparkling soda for the perfect food and drink pairing. The soda is lightly sweet and crisp with just the right amount of bubbles.

The best part about this gluten-free cherry almond danish is that it’s flaky and delicate. It makes a great addition to a tea party or girls luncheon as well as a Sunday brunch. You can also serve up our gluten-free honey cakes with lavender whipped cream.

Ingredients

Flour blend

  • 1/2 C tapioca starch
  • 1/2 C potato starch
  • 1/3 C brown rice flour
  • 1/3 C almond flour
  • 1/3 C sorghum flour
  • 1 tsp. xanthan gum
  • 1 tsp. baking powder

Base layer

  • 1/2 C butter
  • 1 C gluten free flour blend
  • 2 T Rainer cherry Dry Sparkling soda

Egg layer

  • 1/2 C butter
  • 1 C Rainier cherry Dry Sparkling soda
  • 1 tsp. gluten-free almond extract
  • 1 C gluten free flour blend
  • 3 eggs

Almond Icing

  • 2 C powdered sugar
  • 1 tsp. almond extract
  • Rainer cherry Dry Sparkling soda just enough to make at the glaze after sugar and almond extract are combined

Instructions

  • For the base player, cut small pieces of butter into the flour mixture
  • Sprinkle Rainer Dry Sparkling soda over and combine gently with your hands
  • Gather the pastry and press into a pie pan
  • For the egg layer, heat butter and Rainer cherry Dry Sparkling soda to a rolling boil; remove from the heat
  • Quickly stir in the almond extract and flour
  • Return to low heat and stir vigorously with a wooden or plastic mixing spoon (no metal) until mixture forms a ball, about one minute
  • Remove from heat
  • Add eggs one at a time and beat with spoon until smooth and spreadable
  • Spread the egg layer over the base layer and bake at 350 degrees for 50 to 60 minutes or until topping is crisp and golden brown
  • Cool pastry then top with icing and sprinkle with slivered almonds and fresh cut cherries
