This gluten-free cherry almond danish is literally one of the best pastries you will enjoy. My friend Ashley first introduced me to her version before I got diagnosed with celiac disease. I was so smitten by her out of this world danish that we just had to convert it to a gluten-free recipe. Adding in cherries elevated the flavor even more. I’ve always thought cherry and almond make a fantastic pair. From the beautiful fragrance to the taste they couldn’t be better married together.
This can be served as a breakfast or dessert as it’s not too sweet but still full of fresh flavors. The cherries are especially delicious during the summer. Rather than using water where it calls for in this recipe I decided to add the Rainer cherry Dry Sparkling soda. I really wanted the cherry flavor to be infused throughout the pastry rather than just as a garnish on top. Serve it up with the Rainer cherry Dry Sparkling soda for the perfect food and drink pairing. The soda is lightly sweet and crisp with just the right amount of bubbles.
The best part about this gluten-free cherry almond danish is that it’s flaky and delicate. It makes a great addition to a tea party or girls luncheon as well as a Sunday brunch. You can also serve up our gluten-free honey cakes with lavender whipped cream.Â
