I have been planning a cute little 1st birthday party for my sweet Madden for months now (You can see the big board I made on my Pinterest for it…ridiculous, I know 🙂 and thank goodness, it all came together! With the help of our friends at Sun Flour Mills we were able to make an adorable gluten free cake in the shape of a big cookie that was sweetened with honey just like I wanted. The pastry flour was great for making my own cake from scratch. I know Madden sure enjoyed it! We also used their gluten free sugar cookie mix to make big, round and crispy sugar cookies. In addition to that, we made chocolate chip cookies using Jewel’s Cupcake Shop’s all-purpose flour and chocolate chip cookie mix as well as mini brownies using their brownie mix. Since it was a milk and cookies themed party, these mixes and flours were great for making it gluten free as Madden needed but still delicious enough that all our guests gobbled the goodies right up. In fact, they could hardly believe it was all gluten free!
I have found that trying to do half and half is just hard for everyone because there is a cross-contamination issue and you have to bake separately. If you are lucky enough to find the right products so you can bake gluten free and make it taste amazing, everyone wins! Here are some of our recipes. For the cake, I found the recipe on cooks.com and adapted to make it meet our gluten free and naturally sweetened needs.
Honey Sweetened Chocolate Cake (Gluten Free)
1 1/2 c. gluten free pastry flour (We used Sun Flour Mills and enjoyed it.)
3/4 c. raw honey
1/4 cup raw cocoa
2 organic eggs (room temperature)
1/3 cup butter, softened
1/2 cup water
1/2 tsp. Real Salt
1 3/4 tsp. baking powder
1 1/2 tsp. gluten free vanilla
Preheat oven to 350 degrees. Grease a 9×13-inch pan with coconut oil or butter and dust lightly with flour or cocoa; tap out excess. Combine ingredients in order listed. Bake for 30 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes and frost as desired.
For the chocolate cupcakes feel free to use any gluten free chocolate cake mix. We used Sun Flour Mills chocolate cake and Pamela’s vanilla frosting mix and they turned out very tasty! Top them off with an adorable little, gluten free chocolate chip cookie and it was the perfect treat for this themed party.
For the mini chocolate chip cookies that topped the cupcakes, we used this AMAZING recipe from Two Peas and Their Pod and just adapted it to our gluten free needs. They were absolutely perfect, not to mention, so adorable!
