These groundhog day cupcakes are festive and oh so fun! Kids will love that they have a candy filled center. Everybody loves a good cupcake. These groundhog day cupcakes are as delicious as they are fun.
As weird as it sounds, I have always loved groundhog day. I knew that I just had to make a themed treat to celebrate this fun little holiday. These groundhog day cupcakes are so fun to make and the kids will go crazy for them. Not only do they look cute on the outside, but they have a delicious candy filled center. We decided that filling these groundhog day cupcakes with a white coated candy would be perfect for the 6 more weeks of winter outcome. The mini chocolate chip filled center seems fitting for an early spring prediction. We even added some edible cookie “dirt” to give some of the cupcakes a more authentic look.
Since groundhogs are herbivores and typically love berries, we decided to add in some berry jam and juice. Not too much but just enough to give you all a tiny taste of one of our furry friends favorite foods. The best part is that you can customize it with your favorite berry flavor.
These groundhog day cupcakes are super easy to make and the kids love getting involved. We used the Glutino Milk Chocolate Wafers to make the groundhogs. We also used their Gluten Free Chocolate Vanilla Creme Cookies for the edible dirt. They are so yummy that nobody needs to know (nor will they be able to tell) that they are gluten-free.
I used Glutino Gluten Free Pantry All Purpose Flour too because it just works so well. The texture is great as is the taste of baked goods with this gluten-free flour blend. To fill these groundhog day cupcakes, you simply cut out the center of each and add candy. Remove a bit of the cake from the bottom of the top that was cut out. Place the top back over the candy then frost to keep it all in place. Get creative with your cupcake fillings. Maybe even try some edible green sprinkles for “grass”.
While there aren’t really too many ways to celebrate groundhog day, these gluten-free groundhog day cupcakes are all too fitting. I have also done groundhog day pancakes. They are another fun way to incorporate these little fur balls into your day. I always watch Groundhog Day with Bill Murray. In fact, I actually love it! - 2 1/4 C all-purpose gluten-free flour-Glutino brand works fabulously
- 1 tsp. salt
- 1 tsp. baking soda
- 3 tsp. baking powder
- 1 tsp. xanthan gum
- 1 1/4 C sugar
- 1/4 C butter, melted
- 2 eggs
- 1/2 C berry jam
- 1/2 C berry juice
- 1 T cocoa
- 4 oz. cream cheese
- 2 T butter
- 2 C powdered sugar
- 2 tsp. cocoa
- Preheat oven to 350°.
- Meanwhile, prepare cupcake pan with baking cups.
- In a stand mixer, combine first 6 dry ingredients, eggs, butter, 1 T cocoa, 1/2 C jam and 1/4 C berry juice together and mix well.
- Fill cupcake liners 2/3 full. Bake at 350° for 18-22 minutes or until toothpick inserted comes out clean.
- While the cupcakes are baking, prepare the frosting.
- Beat cream cheese and butter until fluffy.
- Mix in the remaining 1/4 C berry juice and 2 tsp. cocoa.
- Slowly add in the powdered sugar.
- *If it is too thick, add more berry juice slowly.
- After the cupcakes have cooled, top with berry chocolate frosting.
