Savory Cheesecake with Bacon

This savory cheesecake with bacon is so delicious with it's rich and buttery crust. It also happens to be gluten-free and not too tough to make.

Ingredients

  • 3 8 oz. pkgs. cream cheese
  • 4 eggs
  • 1 C bacon chopped and divided
  • 1 C frozen corn
  • 1/4 C whipping cream
  • 1/2 C parmesan shredded
  • 1/2 C Swiss cheese shredded
  • 2 T sun-dried tomatoes in oil
  • 1/4 C green onions chopped
  • 1/2 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1/2 C butter melted
  • 6 oz. Crunchmaster herb crackers
  • Garnish: Boursin cheese and chopped green onions

Instructions

  • Preheat oven to 350 degrees
  • In a blender or food processor, crush the crackers into crumbs
  • Combine the crackers and 1/2 C melted butter
  • Press into a well greased springform pan
  • Bake at 350 degrees for 10 minutes
  • In a mixing bowl, beat the cream cheese until light and fluffy
  • Mix in eggs, whipping cream, both cheeses, sun-dried tomatoes, salt, onion and garlic powders and whip until well combined
  • Stir in 3/4 C bacon and green onions
  • Pour cream cheese mixture into the baked cracker crust
  • Bake for another 40-45 minutes or until cheesecake is golden and set where a toothpick inserted in the center comes out clean
  • Remove from oven and allow to cool until it reaches room temperature
  • Place in the fridge and cool at least 1 hour
  • Once the cheesecake is cold, gently remove the springform ring
  • Garnish the cheesecake with crumbled Boursin cheese, remaining 1/4 C chopped bacon and more chopped green onions
  • Serve cold

Notes

Any crackers will do for this recipe but I love the robust flavor of the Crunchmaster herb crackers. I really like that they are also gluten-free.
