White Chocolate Christmas Crack

Ingredients

  • 1 box gluten-free table crackers (or any table cracker)
  • 1 cup salted butter
  • 1 cup brown sugar packed
  • 2 cups white chocolate chips
  • 3 1/2 cups fresh cranberries
  • 1 1/2 cups Dry Sparkling cranberry soda or any cream soda
  • 1 cup sugar

Instructions

  • Pre-heat oven to 325°F
  • Place cranberries, sugar and Dry Sparkling cranberry soda in a saucepan and bring them to a boil and simmer on low 20 minutes until it starts to thicken
  • Break cranberries with a fork and stir
  • Meanwhile, line a large baking pan with aluminum foil and spray the foil with non-stick cooking spray and line the pan with gluten-free table crackers
  • Meanwhile, place the butter and sugar in a pot over low medium-low heat and whisk until the butter is melted
  • Once melted, bring to a boil for 2-3 minutes whisking constantly
  • Remove pan from heat and pour evenly over crackers and spread mixture with a spatula
  • Bake for 7-9 minutes then remove pan and allow to cool 2 minutes
  • Meanwhile, melt the chocolate and then pour over the top with a spatula
  • Drizzle cranberry jam over chocolate
  • Place in the freezer for 30 minutes to an hour
  • Once chocolate has hardened break pieces off the foil and plate

Notes

Feel free to use any cranberry soda that you can find. Although, Dry Sparkling cranberry soda is the best.
Glutino gluten-free table crackers are also my favorite for this recipe.
Pro tip: Feel free to get creative and add little sprinkles like we did to it before freezing for a little extra holiday pizzazz.

How should I store the leftovers?

Place the candy in an airtight container in a single layer and place parchment paper between each layer so they do not stick together. The candy will stay fresh for 1 to 2 weeks.
