Bacon Balsamic Toast
I love a good slaw, but adding it to toast adds even more texture and makes it easy to take on the go!

- 4 slices Canyon Bakehouse gluten-free bread
- 2 C purple cabbage sliced thin
- 4 slices bacon grease reserved
- 4 T butter
- 2 T parmesan
- 4 T aged cherry balsamic
- dash of black pepper and salt
Preheat oven to 350 degrees
On a silicone mat lined baking sheet, butter one side of each piece of bread with 1 T butter
Top each with a sprinkling of black pepper and salt
Bake for 12-15 minutes or until crisp but not burnt
Meanwhile, fry bacon in a large frying pan
Remove bacon and place on a paper towel lined plat; keep grease in the frying pan
Toss cabbage in the reserved bacon grease and fry for 5-6 minutes until it starts to brighten in color and soften
Top each toast with cooked cabbage
Sprinkle with parmesan and add crumbled bacon
Finish with a generous drizzle of aged balsamic
