Peppermint Buttercream and Popcorn Topped Fudge Cookies

You can add any of your favorite toppings to a pre-made cookie to have a quick and easy dessert with pantry ingredients.

Ingredients

  • 1 box Schar fudge cookies
  • 1/2 C butter softened
  • 4 C powdered sugar
  • 1/2 tsp. gluten-free peppermint extract
  • 1 C peppermint popcorn
  • Optional: green food coloring

Instructions

  • In a bowl, beat together butter and powdered sugar until light and fluffy
  • Add peppermint extract (and green food coloring if using it) and mix until combined Plate your fudge cookies how you’d like to serve them
  • Top each with a dollop of peppermint buttercream
  • Finish off each with some peppermint popcorn garnish
