Gluten-Free Gingerbread Pudding Cake

This pudding turns out so ooey, gooey and full of rich molasses flavor. It's perfect made in a heavy bottom pan.

Ingredients

  • 1/4 C butter softened
  • 1/2 C brown sugar
  • 1 large egg
  • 1 tsp. vanilla
  • 1/2 C molasses
  • 1 C water
  • 1 1/2 C gluten-free all purpose flour Glutino works great
  • 3/4 tsp. baking soda
  • 1 tsp. allspice
  • 1/4 teaspoon salt
  • TOPPING
  • 8 T brown sugar
  • 3/4 cup hot water
  • 1/4 cup butter melted

Instructions

  • Preheat oven to 350 degrees
  • In a stand mixer, beat butter and brown sugar until combined
  • Add egg and beat until incorporated
  • Add vanilla, molasses and water and mix well
  • Add the flour, baking soda, allspice and salt
  • Pour into greased 3-4 quart dish
  • Sprinkle batter with brown sugar
  • Combine hot water and melted butter in another bowl and pour over brown sugar (be sure not to stir it)
  • Cook at 350 degrees for 40-45 minutes or until edges begin to get slightly crispy but center is still a bit gooey but cooked
  • Best served warm with vanilla ice cream or homemade whipped cream
