Watermelon & Golden Beet Summer Salad

- 1 C watermelon in 1/2-1 in. cubes
- 2 small golden beets
- 4-6 fresh basil leaves
- 1 T extra virgin olive oil
- Fresh ground black pepper
- Salt to taste
Cook the beets in boiling water until soft enough to poke with a fork. Let cool and peel.
Dice beets into 1/2-1 in. cubes. Arrange the golden beets and cubed watermelon on two plates.
Chop the fresh basil and top the fresh beets and watermelon with it.
Drizzle extra virgin olive oil over each salad and top with fresh ground pepper and a dash of salt.
