Halloween Cheese Ball Frankenstein

Ingredients

  • 2.5 8 oz. packages cream cheese
  • 1 C cheddar, shredded
  • 1 4 oz. can baby shrimp, drained (OR 1 pkg. nitrate-free bacon, cooked and chopped + 1 Tbls. bacon fat)
  • 1 tbls mayonnaise
  • 1 tsp lemon juice
  • 1 tbls dried parsley
  • 1 tsp dried chives
  • 1 tsp garlic salt
  • 1/2 tsp onion, chopped finely
  • 1-2 drops green food coloring
  • 1 C diced black olives
  • 4 whole black olives
  • 1 dill pickle
  • 2 gluten-free pretzel rods
  • 2 pickled okra
  • 2 long fresh chives
  • 1 hard boiled egg

Instructions

  • Mix cream cheese, cheddar, baby shrimp, mayonnaise, lemon juice, dried chives & parsley, garlic salt, chopped onion and a drop or two of green food coloring together until combined
  • With your hands, shape mixture into a Frankenstein head cheese ball with a flat top and square head
  • Add diced black olives to the flat top for hair making sure to do little triangles in the front for a real Frankenstein hair look
  • Slice the hard boiled egg and remove the yolk then place two white rings just under the front of the hair for eyes
  • Place 2 slices of black olive in the middle of each egg ring for the eye pupils
  • Insert pickle for a nose
  • Push pretzel rods into each side for the "bolts"
  • Slice an olive in half and put on half on each pretzel rod, or you can put a whole olive on each
  • Place one okra on each side for ears
  • Finally, use the long chives for a mouth and eyebrows creating a zig zag shape

Notes

You can store this in the refrigerator for up to three days. Just be sure to replace the pretzel rods before serving as they will get soggy.
