  • Preheat oven to 375°
  • To the prepared muffin mix, add the collagen and mashed banana and mix well then fold in the chocolate chips
  • Grease 10 jumbo muffin cups (or do a batch of 6 then another batch of 4 after) and fill muffin cups 2/3 full of batter
  • Bake 20 minutes or until a toothpick inserted comes out clean and let them stand 5 minutes before enjoying

Notes

Why are protein muffins so dry? 
Muffins can get dry by using too much protein powder, oat flour, or almond flour. Make sure you don't overdo it on the dry ingredients and use an oil like coconut oil for fluffy muffins.
How do you store muffins?
You can store these healthy muffins in an airtight container on the counter or in the fridge. They will last longer in the refrigerator but I recommend reheating before serving. Top with maple syrup or even peanut butter before serving.
