Preheat the oven to 350 degrees
Using a stand mixer or in a large bowl, cream together the butter, powdered sugar, vanilla and egg
In another bowl, combine almond flour, gluten-free all-purpose flour, salt and baking powder then blend them slowly into the sugar butter mixture
Fold in the cherry chips and coconut flakes
Using a cookie scoop, place dough on a baking sheet and flatten slightly with the back of a spoon
Bake for 12 minutes until edges are lightly browned
