  • Preheat the oven to 350 degrees
  • Using a stand mixer or in a large bowl, cream together the butter, powdered sugar, vanilla and egg
  • In another bowl, combine almond flour, gluten-free all-purpose flour, salt and baking powder then blend them slowly into the sugar butter mixture
  • Fold in the cherry chips and coconut flakes
  • Using a cookie scoop, place dough on a baking sheet and flatten slightly with the back of a spoon
  • Bake for 12 minutes until edges are lightly browned

Notes

Top tip: Place cookies on a wire rack to allow them to completely cool.

How do I store the leftovers?

Allow the cookies to cool to room temperature before doing anything else. Then, place the cookies in an airtight container with parchment paper between each layer of cookies. Stacking them on top of each other will cause them to stick together.
