- 4 gluten free sub rolls (we like Canyon Bakehouse)
- 1 pound lobster meat, drained and rinsed
- 4 tablespoons butter, divided
- 1/4 cup minced celery
- 1/4 cup mayonnaise
- 1 tablespoon fresh chives, chopped
- 1/2 teaspoon parsley
- 1/2 teaspoon dill
- 1 tablespoon lemon juice
- 1/4 teaspoon sea salt
- 1/8 teaspoon black pepper
In a large frying pan, melt 2 tablespoons of butter and sauté the lobster meat over medium heat for 2-3 minutes turning once half way through
Meanwhile, mix up the mayonnaise, celery, spices, lemon juice and salt/pepper in a bowl
Once meat is cooked, remove it to a bowl and set aside
Wipe out the pan and add the other 2 tablespoons of butter
Once melted, toast the sub rolls on both sides until golden brown
Toss cooked meat in the mayo mixture and add it to the toasted buns (feel free to top with more fresh lemon juice)
