Baked Oatmeal Bars

Baked oatmeal bars take breakfast to the next level in just 30 minutes. They are my kids most requested breakfast! Add in any fruit flavor you love but strawberries are our favorite. These are easy to prepare and a delicious way to start the day!

  • 4 GF Flavored Instant Oatmeal packets
  • 1 C butter softened
  • 2/3 C gluten-free all-purpose flour
  • 1/2 C brown sugar
  • 2 eggs or flax eggs (flax egg: 1T flaxmeal + 2.5 T water mixed in a bowl
  • 1/2 tsp baking powder
  • 1/2 C jam (optional)
  • 1 C fresh fruit (optional)


  • Preheat oven to 350 degrees
  • Generously spray a quarter sheet (9x13) baking sheet with non-stick cooking spray
  • Combine all ingredients in a bowl then spread into your greased baking sheet
  • Bake at 350 degrees for 20 minutes
  • Let bars cool 5 minutes then spread with jamTop with sliced strawberries and enjoy


These bars will likely not even need to be stored because you will gobble them right up but should you need to, store the for up to five days in the refrigerator or three days at room temperature.
