Gluten-Free S’mores Cupcakes and Cup4Cup giveaway!
These gluten free cupcakes are so s'morish!
Servings: 8 servings
- 1 gluten-free vanilla cake mix
- 1/2 C gluten-free graham crackers crumbs
- 2 gluten-free graham crackers
- 1 1/4 C mini marshmallows
- 3/4 C mini chocolate chips
- Marshmallow Frosting:
- 2 C mini marshmallows
- 1/4 tsp. gluten-free vanilla extract
Prepare the vanilla cake mix as directed on the package. Stir in 1/2 C gluten-free graham cracker crumbs, 1 C mini marshmallows and 1/2 C mini chocolate chips. Pour into cupcake liners and bake according to package directions. Top with marshmallow frosting, a few mini marshmallows and chocolate chips and a piece of broken off gluten-free graham cracker.
Melt marshmallows in a double boiler. Add the vanilla and dip your cupcakes into slightly cooled frosting.
