Jack O' Lantern Quesadillas

These jack o lantern quesadillas are so fun! They take under 10 minutes to make and the kids (and picky eaters alike) will love this on Halloween night.

Ingredients

  • 8 corn tortillas
  • 2 C yellow cheddar cheese
  • 1 tsp butter
  • celery leaves or dill pickles (garnish)

Instructions

  • Stack 4 corn tortillas on top of each other

  • Cut out triangle “eyes” and a jack o’ lantern mouth in all of the tortillas using a sharp knife (Get creative here with what you want your jack o’ lantern to look like)
  • Spread a little butter on the frying pan
  • Place the four uncut tortillas on the buttered pan
  • Sprinkle cheese on top of each and gently lay the cut tortilla on top
  • Cook until cheese is melted (Do not flip your tortillas)
  • Top with a baby dill pickle or celery leaves for the stem (or any other green veggie) and serve

Notes

We don't recommend storing leftovers as they are best fresh. However, they can be refirgerated and reheated in the microwave for 30 seconds.
