Instant Pot Carrots

These Instant Pot carrots are the perfect easy side dish with simple ingredients like whole carrots, fresh herbs, and water! Serve alongside weeknight dinners for a healthy meal.

Ingredients

  • 1 cup water
  • 1 pound baby carrots
  • 2 tablespoon butter
  • 1/2 teaspoon salt
  • dash black pepper

Instructions

  • Place 1 cup water in the bottom of your instant pot
  • Place 1 pound baby carrots in the steamer basket and place in the instant pot
  • Pressure cook on high for two minutes then quick release
  • Remove the steamer basket and discard water
  • Put carrots back in the instant pot with butter, parsley and salt and stir to coat

Notes

Top tip: For sweeter carrots, feel free to add 2tbsp of maple syrup before serving! I like to add maple syrup to steamed carrots and sweet potatoes for extra flavor.
You can store these leftover carrots in an airtight container in the fridge for up to 3 days. To reheat, simply microwave until desired temperature is reached. You can top with extra fresh herbs or maple syrup before serving.
