Chipotle Chicken Pizza
This chipotle chicken pizza is semi-homemade and so delicious. It is a great weeknight meal when you are in a hurry but want BIG flavor!

Ingredients
1
gluten-free Real Good Foods cheese pizza
2
chipotle peppers with onions in adobe sauce
diced
1/2
C
cooked black beans
1/2
C
cooked corn
1/4
C
red onion
sliced
1/4
tsp.
cumin
1/2
C
queso fresca
1
C
sour cream
1/2
C
fresh cilantro
1
tsp.
lime juice
1/4
tsp.
salt
more fresh cilantro as garnish
Instructions
Preheat oven to 400 degrees
Season black beans with cumin
Remove pizza from box and plastic wrap
Top with half of each, corn, black beans and queso Fresca
Also top it with all of the sliced red onion
Bake 16-18 minutes or until cooked through and golden
Meanwhile, make lime crema by pulsing sour cream, salt, 1/2 C cilantro and lime juice until mixed well but not too runny
Remove from the oven and top with remaining corn, black beans and queso Fresca
Garnish with fresh cilantro and drizzle with lime crema
Notes
If you are serving this pizza to little ones, reduce the amount of chipotle peppers.
