  • Slice the shallots into thin strips and add them to the cucumbers
  • Add vinegar to cucumbers and shallots

  • Add dill, salt and pepper and stir everything together then refrigerate for at least 30 minutes to overnight

Pro Tip: I like to slice the cucumbers on a diagonal for an extra pretty look
To make this salad, you do brine cucumbers in vinegar. We chose apple cider for a bit more flavor but any vinegar will do.
Once you have assembled the cucumbers, vinegar and other ingredients for this salad, you can keep them in the fridge overnight for the best flavor. You can then keep them in the refrigerator to enjoy all week long.
There is actually no need to drain the cucumbers for this recipe. If you are wanting to make it creamy, you will need to drain them first.
You can absolutely make this a creamy salad! Simply drain the cucumbers of the liquid after leaving in the refrigerator to brine for 30 minutes to overnight. Then add 1/2 cup of sour cream and there you have it, creamy cucumber salad!
