Best Keto Cucumber Salad
This is the easiest cucumber salad and is truly the best. I love that it only calls for five ingredients and doesn’t require any cooking down of sugar and water.
Thanks to the keto soda like Zevia lemon lime, we can just quickly toss everything together. Their sodas have zero sugar and work fantastically in recipes like our gluten-free sticky orange ginger chicken as well.
If you aren’t doing Keto, I recommend Dry Soda. I have even used Dry Sparkling sodas in sweet recipes like our peach rhubarb crisp.

How to make the easiest cucumber salad
Step one: Gather all your ingredients for easy assembly of the best cucumber salad
Step two: Slice the cucumbers and add them to the bowl you will be using
Pro Tip: I like to slice the cucumbers on a diagonal for an extra pretty look
Step three: Slice the shallots into thin strips and add them to the cucumbers
Step four: Add vinegar to cucumbers and shallots
Step five: Pour in the cucumber or lemon lime soda of your choosing (Zevia for keto)
Step six: Add dill, salt and pepper and stir everything together then refrigerate for at least 30 minutes to overnight
To make this salad, you do brine cucumbers in vinegar. We chose apple cider for a bit more flavor but any vinegar will do.
Once you have assembled the cucumbers, vinegar and other ingredients for this salad, you can keep them in the fridge overnight for the best flavor. You can then keep them in the refrigerator to enjoy all week long.
There is actually no need to drain the cucumbers for this recipe. If you are wanting to make it creamy, you will need to drain them first.
You can absolutely make this a creamy salad! Simply drain the cucumbers of the liquid after leaving in the refrigerator to brine for 30 minutes to overnight. Then add 1/2 cup of sour cream and there you have it, creamy cucumber salad! You can also try this Mediterranean cucumber tomato salad for something different.

- 3 English cucumbers
- 1 shallot
- 1/2 C apple cider vinegar
- 1 12 oz bottle keto soda like Zevia or Dry Soda if not on keto
- 1 T fresh dill
- 1/2 tsp. Real Salt
- 1/4 tsp. black pepper
