Ingredients

  • 1 teaspoon olive oil or bacon grease
  • 1 pound cooked shredded pork (leftovers work great!)
  • 12 ounces Ronzoni pasta (we use gluten-free)
  • 15 ounce can of black beans
  • 15 ounce can of diced tomatoes
  • 15 ounce can of artichoke hearts
  • 15 ounce can of corn
  • 1 onion, diced
  • 2 tablespoons garlic
  • 2 cups chicken broth
  • 6 ounces heavy whipping cream or coconut cream

Instructions

  • Saute onion and garlic with oil in the bottom of the Instant Pot on saute mode

  • Add pasta, tomatoes, corn, black beans and artichokes then add chicken broth and enough water to cover the noodles

  • Seal and cook on high for 2 minutes
  • Quick release then stir in the cream and enjoy
