Cucumber Lime Mocktail

This Cucumber Lime Mocktail is a refreshing and zesty concoction that's perfect for any occasion. With crisp flavors of cucumber, sweetness of watermelon, and and tanginess of lime, this will be your new drink of choice.

Ingredients

  • 4 Dry Sparkling cucumber sodas
  • 2 C cubed seedless watermelon
  • 1/2 lime cut into small wedges
  • 2 T brown sugar
  • 4 tsp brown sugar simple syrup

Instructions

  • Place cubed watermelon on a silicone or wax paper lined baking sheet making sure not to let them touch
  • Sprinkle with brown sugar
  • Freeze for at least an hour or until completely frozen
  • Right before serving, slice your lime into wedges and place it on a serving dish next to the bowl of watermelon ice
  • To put your mocktail together, simply place a few watermelon ice cubes in a cup then pour the Dry Sparkling cucumber soda over top and a drizzle of brown sugar simple syrup
  • Finish it off with a squeezed wedge of lime

Notes

Make ahead, storage, and freezing instructions

Make ahead: You can prep the watermelon up to a week ahead of time. Just make sure you transfer the frozen cubes to a plastic bag or airtight container if you're freezing for more than a few hours.
To store: If you have leftovers, you can store them in the fridge for up to 2 days. Do note that the watermelon ice cubes will melt and the taste and texture may change.
To freeze: You can freeze watermelon cubes or turn leftover mocktails into popsicles for the kids on those hot summer days.

  • Citrus twist: Swap out the cucumber sparkling water for lemon lime sparkling water.
  • Tropical vibe: Add a splash of coconut milk for a tropical element.
