Easy Gluten Free Spring Rolls in 10 Minutes

Our easy gluten free spring rolls are one of our simplest recipes. It only takes 10 minutes and is great for a side dish or tasty snack. They are made with fresh herbs and taste just like traditional spring rolls that you love from your favorite restaurant.

Ingredients

  • 1 cup matchstick cut carrots
  • 1 cup thin cut strips of cucumbers
  • ½ cup fresh mint
  • 8 sheets rice paper (spring roll wrappers)
  • 1 cup thinly sliced, cooked chicken or cooked shrimp optional

Instructions

  • Fill a shallow dish with an inch of warm water
  • Place one rice paper in the water for about 20 seconds until the sheet is soft and pliable then carefully lay it flat on a plate.
  • Fill each rice paper with a few pieces of mint leaves, some carrots, cucumbers and chicken or shrimp if you are using them then fold the short sides in first followed by the long edge of one side then rolling in (similar to what you would if making a burrito) Repeat until all 8 rolls are made...

Notes

You will want to wrap each spring roll in plastic wrap and then store them in an airtight container. They will last for two days in the fridge. Allow them to warm to room temperature before eating.
