Preheat your oven to 350°
In a stand mixer, beat the butter and sugar until light and fluffy then add eggs and vanilla and mix some more.
In another bowl, combine dry ingredients minus the chocolate chips then slowly add the dry ingredients to the wet ingredients.
Place the cookie dough in the fridge, covered, to chill for one full hour
Remove and drop by heaping tablespoons onto silicone mat, or parchment paper lined baking sheets
Bake 10-12 minutes or until golden brown
Let them cool slightly on the baking sheet then transfer to a wire rack to continue cooling
To make the jar gift, simply combine the gluten-free flour, salt, baking soda and nutmeg in a bowl or in a layer at the bottom of a 1 quart mason jar. Next, top with chocolate chips then add a layer of the brown sugar then white sugar. Finish with pecans if you like them.
