Gluten Free Chocolate Chip Cookies (Voted the BEST from Non-GF eaters!)

My non-gluten free sister and her husband (yeah the one we tricked with these cupcakes) said these are the BEST gluten free chocolate chip cookies! They truly are so yummy and have the perfect balance of chewiness, sweetness, and chocolaty goodness that will have everyone reaching for seconds.

Ingredients

  • ¾ cup brown sugar
  • ½ cup sugar
  • ¾ cup butter melted
  • 2 eggs
  • 1 teaspoon gluten-free vanilla extract
  • 2 cups gluten free all purpose flour
  • ¼ cup almond flour
  • ½ teaspoon Real Salt
  • ¾ teaspoon baking soda
  • 1 cup chocolate chips
  • ¼ teaspoon nutmeg (optional but HIGHLY recommend)
  • ½ cup pecan pieces (optional)

Instructions

  • Preheat your oven to 350°
  • In a stand mixer, beat the butter and sugar until light and fluffy then add eggs and vanilla and mix some more.
  • In another bowl, combine dry ingredients minus the chocolate chips then slowly add the dry ingredients to the wet ingredients.
  • Place the cookie dough in the fridge, covered, to chill for one full hour
  • Remove and drop by heaping tablespoons onto silicone mat, or parchment paper lined baking sheets
  • Bake 10-12 minutes or until golden brown
  • Let them cool slightly on the baking sheet then transfer to a wire rack to continue cooling
  • To make the jar gift, simply combine the gluten-free flour, salt, baking soda and nutmeg in a bowl or in a layer at the bottom of a 1 quart mason jar. Next, top with chocolate chips then add a layer of the brown sugar then white sugar. Finish with pecans if you like them. Notes

Storing - You can easily store these cookies in an airtight container for up to 5 days. Place the cookies on a wire rack or cooling rack to cool to room temperature before storing. I also like to display them on a cake stand with a dome lid for everyone to enjoy whenever they'd like.
Freezing - You can either freeze the cookies after baking them or you can also freeze the dough in a freezer safe container. I like to freeze them in individual/small portions so I can pick how many cookies to bake.
