Gluten-Free Gingerbread Pudding Cake
This pudding turns out so ooey, gooey and full of rich molasses flavor. It's perfect made in a heavy bottom pan.

- 1/4 C butter softened
- 1/2 C brown sugar
- 1 large egg
- 1 tsp. vanilla
- 1/2 C molasses
- 1 C water
- 1 1/2 C gluten-free all purpose flour Glutino works great
- 3/4 tsp. baking soda
- 1 tsp. allspice
- 1/4 teaspoon salt
- TOPPING
- 8 T brown sugar
- 3/4 cup hot water
- 1/4 cup butter melted
Preheat oven to 350 degrees
In a stand mixer, beat butter and brown sugar until combined
Add egg and beat until incorporated
Add vanilla, molasses and water and mix well
Add the flour, baking soda, allspice and salt
Pour into greased 3-4 quart dish
Sprinkle batter with brown sugar
Combine hot water and melted butter in another bowl and pour over brown sugar (be sure not to stir it)
Cook at 350 degrees for 40-45 minutes or until edges begin to get slightly crispy but center is still a bit gooey but cooked
Best served warm with vanilla ice cream or homemade whipped cream
