Equipment

Ingredients

  • 3 pound frozen pork roast
  • 1 cup BBQ sauce
  • juice from one lemon
  • ¼ cup coconut aminos (or soy sauce)
  • ¼ teaspoon coriander seeds
  • 1 teaspoon garlic salt

Instructions

  • Add all ingredients on top of the roast in the Instant Pot
  • Add 1 ½ cups of water to keep roast from burning and cook on high pressure for 90 minutes
  • Slow release and serve hot (internal temperature should be 165)

Notes

Storing - Allow the pork to cool to room temperature. After it is cool, store it in an airtight container in the fridge.
The pork will last 3-5 days in the fridge. You can use the leftovers for tons of different meals and snacks.
Freezing - If you want to freeze your pork, allow it to cool to room temperature first. Then, you can store it in an airtight container.
You can also seal the pork in a freezer bag. It will last in the freezer for 4-12 months.
