Mom's Gluten Free Peach Cobbler (From the 90's)
This 90's classic gluten free peach cobbler my mom used to make is a delicious balance of fresh peaches, warm spices, and a tender, buttery topping. There is nothing better than the juicy flavors of warm summer peaches baked into a crispy golden cobbler.

Preheat oven to 375°F. In a large mixing bowl, combine sugar, brown sugar, gluten-free flour, and eggs for the peach filling.
Carefully fold in sliced peaches until everything is covered. Pour the mixture into a greased 13x9-inch baking dish and spread.
In a separate bowl, whisk together gluten-free flour, sugar, baking powder, and salt.
Add in softened butter using a fork or pastry cutter until the mixture looks like large crumbs.
Gently beat the egg and milk, then stir them into the dry mixture until just combined.
Sprinkle the cobbler mixture over the peaches, making sure everything is covered. Add extra sugar on top for a golden, crisp topping.
Bake for 45 minutes, or until the top is golden brown and the edges are set.
Let the cobbler cool slightly before serving. Enjoy by itself or with vanilla ice cream.
