Ingredients

  • ½ cup butter
  • 2 cup sugar
  • ½ cup milk
  • ¼ cup cocoa powder
  • ½ cup creamy peanut butter
  • 1 teaspoon vanilla
  • 3 cups gluten free quick cooking oats

Instructions

  • Add the butter, sugar, milk, and cocoa powder in a large saucepan and cook over medium heat until butter is melted, making sure to stir often. Bring the mixture to a rolling boil for 1 minute.
  • Remove from the heat, and stir in the peanut butter and vanilla extract until fully combined.
  • Stir in the oats and mix until completely coated.
  • Drop spoonfuls of the mixture onto silicone mat or parchment paper lined baking sheets.
  • Allow to cool for at least 25 minutes then enjoy.

Notes

Storing and make ahead

Storing: Store the cookies in an airtight container or ziplock baggie at room temperature for up to 5 days. If you want to store them for longer, refrigerate for up to 2 weeks.
Make ahead: These cookies freeze really well, if you're looking to serve them at a later date or just have a cookie on hand whenever you need one, freeze them in a ziplock baggie for up to 3 months.

What can I use instead of peanut butter?

If you have a peanut allergy don't like peanuts, you can swap peanut butter for almond butter, cashew butter, or even sunflower seed butter for a nut free variation. Keep in mind, the flavor will change slightly depending on the substitute.
