30-Minute Gluten Free Breakfast Bars (My kids FAVORITE!)

These soft and chewy gluten free breakfast bars are packed with so much fruity flavor and are truly the most requested morning meal from my kids. They only take 30-minutes to make and are so cozy and delicious.

Ingredients

  • 4 GF Flavored Instant Oatmeal packets
  • 1 cup butter softened
  • cup gluten-free all-purpose flour
  • ½ cup brown sugar
  • 2 eggs or flax eggs (flax egg: 1T flaxmeal + 2.5 T water mixed in a bowl
  • ½ teaspoon baking powder
  • ½ cup jam (optional)
  • 1 cup fresh fruit (optional)

Instructions

  • Preheat oven to 350 degrees
  • Generously spray a quarter sheet (9x13) baking sheet with non-stick cooking spray
  • Combine all ingredients in a bowl then spread into your greased baking sheet
  • Bake at 350 degrees for 20 minutes
  • Let bars cool 5 minutes then spread with jam then top with sliced strawberries and enjoy

Notes

Storing - Store these bars on the counter for up to 2 days or in an airtight container in the fridge for up to 4 days. Make sure the bars are completely cooled before storing in the fridge. Reheat in the microwave or the oven when you're ready to serve.
Freezing - Place these bars in a ziplock baggie or freezer safe container and freeze for up to 3 months. I recommend cutting the bars into individual servings before freezing. That way, you can thaw what you need.
