Sweet Vegan Breakfast Burritos Gluten-Free

Ingredients

  • 4 gluten-free, vegan flour like tortillas
  • 1 C sliced strawberries or other fruit
  • 1 C blueberries or other fruit
  • 1 C gluten-free, vegan granola
  • 6 T vegan cream cheese room temperature
  • 3 T powdered sugar
  • ½ tsp. lemon juice

Instructions

  • In a bowl with a mixer, combine cream cheese, powdered sugar and lemon juice
  • Spread cream mixture evenly over four tortillas
  • Top each with ¼ cup of blueberries, ¼ C strawberries (or ½ cup any other sliced fruit you prefer) and ¼ C gluten-free granola
  • Roll and serve
