If you need an easy weekday breakfast, these sweet vegan breakfast burritos are your answer. Granola isn’t just for cereal anymore! They are an easy and delicious breakfast with nutritious ingredients to start the day.
These sweet burritos are an easy way to get nourishment into little (and big) bellies quickly. Around here, weekday mornings sound a bit like this, “Hurry, hurry get dressed. Hurry, hurry, get your shoes. What about your backpack? Let’s go, let’s go”.
Life just goes at double speed when we are trying to get out the door for school and breakfast can be stressful if I don’t have some quick and easy options ready.
We love eating eggs and I love making hashbrowns but the kids get sick of these two things. Coming up with something that gets them excited to eat is what I am constantly trying to achieve.
These are SO easy and they are a fun little breakfast that the kids will enjoy eating both for the taste and the novelty look. We also love making sweet breakfast sushi with a banana and peanut butter inside a GF tortilla.
Fresh fruit, crunchy whole grain gluten-free granola and a bit of sweet cream marry together so well for a little breakfast delight and work so well in these burritos.
For a savory burrito option, our vegan queso is the perfect addition.
Gluten-Free Tortillas
There are lots of store bought varieties of gluten-free and vegan tortillas available now or you could make them homemade. These gluten-free tortillas from Meaningful Eats are perfect!
Fresh Fruit
Get creative with the fruit you add! While we choose strawberries and blueberries, the possibilities are endless.
- Peaches
- Pears
- Apples
- Blackberries
- Raspberries
- Boysenberries
- Pineapple
- Guava
- Passionfruit
- Banana
- Mango
and more!
Gluten-Free Oats & Granola
When it comes to granola, not all are gluten-free. Make sure to choose one that is and preferably one that is made with dedicated gluten-free oats. And there is a difference inย muesli vs granola.
Some people with celiac disease are not able to tolerate oats. The best thing to ensure your oats are truly gluten-free is to buy them certified gluten-free. We like and trust Gluten-Free Prairie oats because they are grown in dedicated gluten-free fields in gorgeous Bid Sky, Montana. They are great for making healthy granola bars too.ย
I love how much Gluten-Free Prairie brand cares about the celiac and gluten-free community. In addition to their certified GF oats, they also offer oat flour, oat groats, sugar cookie mix, pizza crust, chocolate brownie mix, gluten-free granola, Hunger Buster cookie and pancake mix. Get all of their products HERE.
Their oats are amazing in so many recipes including our gluten-free oatmeal cream pies,ย chocolate oatmeal cake,ย gluten-free meatloaf, baked oatmeal barsย and gluten-free oatmeal pancakes.
Sweet Filling
