Watermelon Mocktail

Each sip of this refreshing frozen watermelon mocktail is a bursting with joy! As the weather gets warmer and the sun beats down, there's nothing better than cooling off with a chilled summery beverage.

Ingredients

  • 3 cups watermelon sparkling water
  • 3 cups seedless watermelon cubed
  • 3 cups ice
  • ½ lime juiced
  • ½ lime sliced for garnish
  • ½ cup sugar crystals on a plate

Instructions

  • Dip your cups into the bowl of water
  • Shake off any drops of water, and dip into the sugar on a plate
  • Place soda, watermelon, lime juice and ice in the blender and mix until smooth
  • Pour into each each cup and garnish with a fresh lime slice

Notes

Make ahead, storage, and freezing instructions

To make ahead: You can make this drink 3-4 hours ahead of time by preparing the watermelon mixture and storing in the fridge. Before you're ready to serve, blend again. Do note that the sparkling water may become flat so it's best served fresh.
To store: Leftover mocktail can be stored in the fridge for up to two days. However, texture will change and it's best to shake or blend before serving again.
To freeze: You can also turn leftover mocktails into summer popsicles. Freeze into popsicle molds and serve as a fun summer dessert.

Recipe variations

  • Winter breeze: Try adding a few mint leaves before blending for an extra burst of flavor.
  • Fruity: Feel free to add in extra fruit like fresh berries or a couple of tablespoons of raspberry simple syrup.
  • Tropical twist: Instead of sparkling water, you can blend with coconut water for a tropical spin.
