This raspberry simple syrup is so versatile! It only takes a few minutes to make and can be used for mocktails and drinks as well as cakes and dessert.
This simple syrup could not be more SIMPLE! Truly, anyone can make this recipe and it only takes three ingredients.
The flavor, like in our raspberry gluten-free pop tarts, is absolutely delicious! It has just the right amount of fruity flavor while not being too overpowering.
It is perfect for making mocktails. Whether you are new to mocktail making or a pro, raspberry simple syrup can easily elevate many drinks. I love to change up our cranberry mocktail and make it raspberry for a summer refresher!
What ingredients you will need
With just few things and a couple of minutes, you can make this delicious and fresh sweetener with just a hint of fruit.
We use the following ingredients…
- Water
- Sugar
- Fresh Raspberries
Yep, that’s it! It’s really more simple than you think. The water and sugar should always be equal parts. The fruit is usually 1.5X the water and sugar you use.
Is simple syrup the same as liquid sugar?
Yes, simple syrup is just liquified sugar. It is made by dissolving dry sugar into water.
What is the purpose of it?
Dissolving the dry sugar into water liquifies it which makes it much easier to mix into drinks without making them gritty. You can also easily brush it on cakes as a way to make them more moist before frosting.
How to make it
- Add 1 cup of water and 1 cup of sugar to a pan and whisk well
- Add 1 1/2 cups of fresh raspberries
- Bring to a boil whisking occasionally then remove from heat and let steep for 45 minutes
- Pour syrup through a fine mesh strainer into a glass bottle, making sure to push down the pulp as you strain
How do you store simple syrup?
It can be stored at room temperature or in the refrigerator, whichever you prefer. You can use a glass or plastic container just be sure the simple syrup is cooled before pouring in if you are going to use plastic.
Does it need to be refrigerated?
Simple syrup does not need to be refrigerated. It handles well at room temperature.
How long do infused blends last?
You can keep simple syrup for 1-2 weeks art room temperature or about 1 month in the refrigerator. Once it starts to get cloudy or discolored, it is no longer good.

How do you use it in and on cakes?
Simple syrup makes cake extra moist, especially when doing a layer cake. Simply brush the simple syrup onto the top of each cake layer before frosting.
You can easily add it to our eggnog cake for a bit of fruity flavor. For a 12 inch cake, you will use roughly 1/4 cup simple syrup.
