My son is newly gluten free but loves bread. These rolls were a GODSEND and my entire family loved them too. -Brianna

Place milled chia and warm water in a cup, let soak 2 minutes. Meanwhile, dissolve rapid rise yeast and sugar in warm milk in another cup, let sit to proof.

Combine all flours, starches, xanthan gum, baking powder, salt, sugar and gelatin.

Mix the soaked milled chia and yeast mixture with eggs, coconut oil, melted butter and apple cider vinegar in a stand mixer.

Slowly add dry ingredients to the wet ingredients in the stand mixer.

Roll the dough out into two discs. Using a pizza wheel, cut into triangle shaped pieces. Grate the frozen butter on to the cut disc.

Roll each piece into the crescent shape and place on a cookie sheet at least two inches apart.

Let rise, then bake. Brush on more melted butter after they come out of the oven if desired.
