Homemade Gluten Free Lasagna

This homemade cheesy gluten free lasagna is the ultimate cozy dinner that has a flavorful sauce filled with Italian spices and the perfect combination of sausage and ground beef. The gluten free noodles don't require any cooking ahead of time which makes this much easier to put together. They are layered between sauce and the best cheese filling. Everyone will ask you for this recipe and nobody will believe its gluten free.

Ingredients

  • 1 batch gluten free spaghetti sauce (this is where the ground beef and tomatoes/tomato sauce are)
  • ½ pound Italian sausage
  • 1 egg
  • 2 cups ricotta
  • 1 tablespoon Italian seasoning
  • cup parmesan
  • 2 cups mozzarella
  • ½ cup parmesan
  • 1 box gluten free lasagna noodles (roughly 12)

Instructions

  • Prepare your gluten free spaghetti sauce as directed but add ½ pound ground Italian pork when cooking ground beef
  • While the sauce is simmering, make the cheese sauce by mixing 1 egg, 2 cups ricotta, 1 tablespoon Italian seasoning and ⅓ cup parmesan in a bowl with a fork until crumbly
  • Once sauce is done spread 1-2 cups meat sauce on the bottom of a 9x13 inch baking pan and layer with raw gf noodles
  • Top with ⅓ of the cheese mixture and then repeat the layers twice ending with sauce
  • Cover with tinfoil and bake at 350 degrees for 45 minutes then uncover and top with 2 cups shredded mozzarella and ½ cup shredded parmesan and Bakke 10 more minutes until golden brown and bubbly

Notes

VARIATIONS

Add vegetables - I recommend adding in diced zucchini, squash, bell peppers, mushrooms, or fresh spinach.
Different meat - You can omit the meat all together or use ground chicken, ground turkey, etc.

STORAGE

Storing - You can store this easy gluten-free spaghetti recipe in the fridge an airtight container for 2-3 days. Make sure your pasta has cooled to room temperature before storing and reheat in the microwave or in the instant pot when you're ready to serve. 
Freezing - You can freeze this delicious recipe for up to 3 months
