That chicken lo-mein with zucchini noodles looks perfect for lunch! Also, I like the fact that I wouldn’t feel the need to heat that meal up every day because it would probably be delicious cold too (and since we teachers sometimes choose between heating up a meal or finishing paperwork that must be done- we eat cold lunches!)

It’s wonderful how both cookbooks utilize such beautiful pictures with easy to follow instructions. Simplicity is the best way to follow and learn to make something new. Instagram is also a helpful tool for me to learn new recipes. The gluten-free crepes sound delicious to try as well.
