Best Gluten-Free Meatloaf (Homestyle)

Ingredients

  • 1 pound ground beef (you can use lean ground beef or higher fat, whichever you prefer)
  • 2 eggs
  • 1 cup crushed gluten-free oats or oatmeal (or gluten-free breadcrumbs if you prefer)
  • 1/4 cup ketchup plus more for topping
  • 2 tablespoon gluten-free Worcestershire sauce
  • 1 tablespoon dried onion
  • 1 tablespoon dried parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat oven to 350 degrees
  • Combine all ingredients well with clean hands in a large mixing bowl
  • Press meat mixture into a greased loaf pan and bake at 350 degrees for 35 minutes or until internal temperature reaches 160 degrees using a meat thermometer
  • Turn oven to broil
  • On top of the meatloaf add more ketchup and broil 2-3 minutes

Notes

You can certainly use gluten-free bread or gluten-free bread crumbs/crushed crackers in this meatloaf. However, the wholesome aspect of this meatloaf comes from the gluten-free oats. 
For mix-ins I recommend delicious herbs like parsley, oregano, basil, or other Italian seasoning. I also love using dried onion or onion powder because it lends great flavor without having to chop those darn onions.
This recipe works great with ground turkey or ground beef. Really it comes down to a personal preference.
