Our no bake gluten free banana pudding is full of nostalgic southern flavors and has creamy layers of homemade banana pudding, light and fluffy whipped cream and soft vanilla wafers. It is a beautiful dessert that gets better overnight so it is perfect to make the day before a big event.

Why this will be your new favorite dessert
This is an easy, no bake recipe: When the weather its hot and the last thing you want to do is turn on the oven, this dessert is perfect! It can be made in under 45 minutes and doesn't need to bake. Int is such a cheery dessert that I actually put together for my seat at the sunshine table dinner party.
It just gets better: I wanted a dessert that could be made ahead of time and actually got BETTER in the fridge for my dinner party. This way, I could focus the party day on fresh dishes. We always made our cream pies for Thanksgiving the day before and since this is much like our banana black bottom pie filling, I figured it would be great to make before as well and it sure is.
The perfect ratio of flavors and textures: My non gluten free hubby said this dessert has the perfect balance of soft cookies, creamy pudding and fluffy whipped cream. And guess what? I even made his version dairy free too!
All you need is a few simple ingredients
Heavy whipping cream: When whipped with some powdered sugar, this becomes the fluffy layer that makes this dish extra light. I have used dairy free heavy whipping cream and it also worked like a charm.
Gluten free vanilla wafers: My go to brand is kinnikinnnick but boy would I love to make these homemade one day too.
Pudding: Ok, the key really is homemade pudding. I promise you it is just as easy as the boxed stuff but 10x's better. You will never go back to a store bought pudding once you make it from scratch. It is simply made inn 20 minutes with heavy whipping cream, milk, sugar, egg yolks, butter, vanilla and cornstarch.

No Bake Gluten Free Banana Pudding
Ingredients
Pudding
- 3 cups whole milk, divided
- 3 cups heavy whipping cream
- 3 tablespoons butter
- 1 โ cup sugar,ย divided
- 6 egg yolks
- ยฝ cup cornstarch
- 1 teaspoon gluten free vanilla extract
Whipped Cream Layer
- 2 cups whipping cream
- โ cups powdered sugar
- 2 boxes gluten free vanilla wafers
- 3 bananas
Instructions
- Place 2 ยฝ cups milk, cream, 1 C sugar and butter in a heavy saucepan or double boiler and cook until butter is melted and milk is slightly scalded
- Whisk together egg yolks and โ C sugar then slowly add this mixture to the hot milk mixture, whisking lightly and continue cooking for 10-15 minutes on a low heat until mixture starts to thicken a bit
- Whisk reserved ยฝ milk and cornstarch together and add to hot milk mixture slowly, whisking constantly
- Continue to whisk mixture intermittently & continue to cook for the next 10-15 minutes then set aside to cool inn a seperate bowl.
- Meanwhile, whip 2 cups heavy whipping cream in a stand mixture until stiff peaks form, about 2 minutes, then add powdered sugar and whisk in more until combined.
- Start building the trifle by placing cookies in one layer on the bottom of the trifle dish, then top with a layer of cooled pudding.
- Slice bananas and place them slice by slice in a circle sticking them into the layer gently making sure they are stuck well to the inside of the dish so they don't turn brown and then add a layer of whipped cream.
- Repeat twice (cookies pudding, bananas and whipped cream) then top with some crushed cookies and whole cookies as garnish.
