What makes these cookies so great
Am I allowed to say everything? Because I quite literally love everything about these cake mix cookies.
- So, letโs start with how delicious and versatile they are. Maybe thatโs not fair to say either because you can turn them into whatever flavor you want. This recipe used pudding mix and thatโs where a lot of the flavor comes from. You want a vanilla cookie? Then you use yellow cake mix and vanilla pudding mix like these 15-Minute Gluten Free Christmas Cookies with Sprinkles (5-Ingredient). Chocolate? Use chocolate cake mix and chocolate pudding mix. - These cookies also have the perfect, chewy texture that I love in cookies. While they use cake mix, theyโre not cakey cookies. They are decidedly the perfect cookies. We love them with pistachio in our grinch cookies and with lemon in our gluten free lemon crinkle cookies.
- And of course, they are super duper easy to make. Much like these Easy Red Velvet Cake Mix Cookies. Just put all six ingredients in your stand mixer (or use a hand mixer) and mix, mix, mix! Then you just roll the dough balls in a yummy smattering of powdered sugar and cornstarch before baking. Theyโre that simple.

- Cake mix – You can use any gluten-free cake mix you prefer. Just make sure you go with the flavor that suits your cookie best.
- Pudding mix – Use the flavor that tickles your fancy.
- Butter – Regular old butter works fantastically. But you can get as fancy with it if you want. And you can even use dairy free!
- Eggs – Of course we need that ingredient that holds everything together. We have also used a 3 to 1 ratio of water to egg replacer with the Simple Truth Organic brand here then added about 2-3 tablespoons milk (dairy free works too) to the batter so it was more moist to make them egg free!
- Powdered sugar – Youโll roll the dough balls in this just before you bake them.
- Cornstarch – Same goes for this ingredient. Just mix with the powdered sugar and roll.
How to make cake mix cookies
Mix: Put all the ingredients into a stand mixer. A hand mixer will work just as well.
Combine the powdered sugar and cornstarch in a small bowl and set aside.
Scoop into balls using a cookie or ice cream scoop.
Roll the dough in the powdered sugar and cornstarch mixture.
Bake and then enjoy!
Pro tip: Make sure you donโt over bake these cookies. Because you canโt usually see that theyโre โbrowningโ you donโt want to over do it. In fact, I like these cookies a bit underbaked. Theyโre delicious that way!
Storing instructions
Storing – You can store these cookies in an airtight container for up to five days.
Freezing – You can also freeze these cookies after theyโre baked or you can freeze the dough. Because theyโre so quick to make, I usually make a fresh batch rather than freeze the dough. I like to flash freeze them so I can store them in the same container together without them turning back into one lump of dough. Then I just pull out how many cookies I want to bake.

Can I make these dairy free?
Yes! Just make sure you use a cake mix that doesnโt have any dairy and use a dairy-free butter.
Can I make these cookies without cornstarch?
The cornstarch is nice because it prevents the powdered sugar from absorbing into the cookie while it bakes. You could also use tapioca starch if you need to avoid corn.
Can I make this recipe vegan?

15-Minute Gluten-Free Cake Mix Cookies (so soft and buttery!)
Ingredients
- 17 oz 1 box gluten-free vanilla cake mix
- 1 box Instant Pudding flavor of your choice!
- 8 tbsp Butter Softened
- 2 Eggs
- 1/2 cup Powdered Sugar
- 1/4 cup Cornstarch
Instructions
- Preheat oven to 375 degrees
- With either a stand mixer or hand mixer, combine the dry cake mix, the dry pudding mix, butter, and eggs. Mix well.
- With a mini cookie scoop (ice cream scoop), roll dough into 1" balls
- In a separate bowl, combine the powered sugar and corn starch
- Roll each ball of dough in the powdered sugar and cornstarch mixture
- Place cookie dough balls on a prepared baking sheet and bake for 8-10 minutes or until cookies are lightly brown on the bottom and still soft to the touch on top
- Let cookies rest for 1-2 minutes before transferring to a wire rack
