Muffins are such a delicious breakfast and these gluten-free dairy-free blueberry power muffins are no exception. Just because we want to feed our body good nutrition, doesn’t mean we have to sacrifice on flavor. You would never know these muffins are packed full of good nutrition like sorghum, flax, hemp hearts and antioxidant rich blueberries because they taste great! Similar to our strawberry shortcake breakfast bars. They are also soft and fluffy in texture so you can serve them up to everyone whether they live gluten-free and dairy-free or not. In fact, my family and I eat dairy all the time. We felt like these were just as good as a dairy filled muffin. The key with any good dairy-free recipe is a good alternative. I have a hard time using almond milk in baked goods because they just don’t turn out the same for me.
I am loving this new Flaxmilk from Good Karma Foods. It is actually very tasty on it’s own and that’s coming from a dairy drinking girl! It is also thick and flavorful so it works lovely in recipes. The Flaxmilk + Protein variety and the original Flaxmilk both work great. - 2 T butter or Earth Balance butter sticks
- 1/2 C brown sugar
- 1 egg
- 1/2 C Good Karma Flaxmilk+Protein
- 1/2 tsp. lemon juice
- 1/2 tsp. gluten-free almond extract
- 1/4 C brown rice flour
- 2 T sorghum flour
- 2 T coconut flour
- 3 T almond flour
- 1/4 C tapioca starch
- 1/4 C potato starch
- 2 tsp. baking powder
- 1 T hemp hearts
- 1/4 tsp xanthan gum
- 1 C fresh blueberries
- Preheat oven to 375°
- In a stand mixer, combine all wet ingredients and mix well
- In another bowl, combine dry ingredients
- Slowly add dry ingredients to wet ingredients and mix well
- Fold in blueberries
- Fill greased muffin cups 2/3 full
- Bake at 375° for 22-24 minutes
