These fluffy gluten free cheddar biscuits are spot on in flavor for the Red Lobster classic that you know and love. The secret step is to create those pockets of butter and flaky layers with sharp cheddar. We top them with a delicious herbed butter topping for that final rich nostalgic flavor.

Nostalgic restaurant flavor: My mom and I went to Red Lobster all the time when I was little before we were both diagnosed with celiac disease. The cheddar biscuits were our favorite part of the meal and their flavor was embedded deep in our brains so when the time came to make these, we new exactly what they needed. Our friends and family agreed that we had got it just right.
They're so FLUFFY: Just like you've heard on Despicable Me, they really are so fluffy! The key is not to overwork the dough. In fact, barely mix the ingredients together and then just gather the dough into a disc and ever so gently roll out the top once or twice before cutting. Gather the scraps and repeat barely working the dough.
The key biscuit baking ingredients
Good quality butter: Grating frozen butter into the dough gives it moisture when it bakes and little pockets of buttery goodness that make these just so irresistible.
Really good cheddar: This is the time to buy good cheddar so the flavor shines. They are cheddar biscuits after all. Grated and folded into the dough will give you cheesy goodness throughout.
Buttermilk: This moisture really gives these biscuits great texture and moisture. The fact that it is cultured really helps with the gluten free flour. We found that cultured dairy almost always helps in gluten free baked goods.

Gluten Free Cheddar Biscuits (Red Lobster Copycat)
Ingredients
- โ cup brown rice flour
- โ cup sorghum flour
- ยฝ cup tapioca starch
- ยฝ cup potato starch
- 3 tablespoons almond flour
- 2 tablespoons arrowroot
- 4 teaspoons baking powder
- 1 teaspoon gelatin
- 1 teaspoon xanthan gum
- 1 teaspoon Realsalt
- โ cup butter cold
- ยฝ cup buttermilk
- ยฝ cup sour cream
- 1 teaspoon apple cider vinegar
- 1 cup cheddar, shredded
Butter Herb Topping
- 3 tablespoons salted butter, melted
- ยผ teaspoon galic powder
- โ teaspoon garlic salt
- 1 tablespoon fresh parsley, chopped (dried works as well)
Instructions
- Preheat oven to o 450ยฐ. In a stand mixer, combine all dry ingredients. Using a cheese grater on large or coarse size, grate butter into flours and mix until crumbly.
- Add the buttermilk, sour cream and vinegar. Only mix it until it pulls together. Over mixing will yield hard biscuits. The mixture will be slightly wet. Let it rest for 20-25 minutes
- Add your grated cheddar then fold the dough over itself and shape the dough with your hands (for REALLY fluffy biscuits, do NOT roll the dough out) on parchment or a non-stick baking sheet, to 1โ-1 ยฝ" thick and cut into rounds with a biscuit cutter.
- Gather remaining dough and use your hands to create another disc. Cut more biscuits out. Bake on a parchment or silicone mat covered cookie sheet for 13-15 minutes or until lightly browned.
- Whisk together the butter herb topping and brush on warm biscuits from the oven with a pastry brush
