These gluten-free pecan pie shortbread bars help you ditch the time time consuming task of making gluten-free pie crust. This buttery shortbread crust takes just minutes to make. Once it is all prepared, it tastes almost exactly like traditional pecan pie.
This year I was tasked with the responsibility to make pecan pie for our family dinner. I absolutely adore shortbread so I thought maybe I could save myself time and use it as the crust. Turns out, it was one of the best shortcuts I have ever made! Now I gladly offer to bring dessert to any holiday gathering.

Gluten-Free Pecan Pie Shortbread Bars & GIVEAWAY
- 4 eggs
- 1 C maple syrup
- 6 T butter melted
- 3/4 C sugar
- 1/4 tsp. salt
- 1 1/2 C pecans
- 1 box gluten-free Walkers pure butter shortbread
- 4 T butter melted
- Preheat the oven to 350°
- In a bowl, crush the shortbread then stir in 4 T butter
- Press the shortbread crust into a pie pan
- Meanwhile, mix the eggs, maple syrup, 6 T melted butter, sugar, salt and 1/2 C crushed pecans
- Pour filling over the shortbread crust
- Top with remaining 1 C pecans
- Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean
