There is nothing quite as deliciously ooey, gooey as these gluten-free s’mores cookies! To celebrate national s’mores day, I decided to put together these classic summer flavors of soft marshmallow, rich chocolate and nutty gluten-free graham crackers into one delicious cookie.
Honestly, I have never been a big fan of s’mores. Even as a little kid when we would go camping, I would only eat the graham crackers, never the chocolate or marshmallows. I don’t know what it is, I just never liked an actual s’more but I LOVE the flavor of s’mores in other things like ice cream, cookies or toppings.
It is weird but I think it is the marshmallow aspect. I NEVER eat plain marshmallows. They are just too fluffy or too…I don’t know, something. The funny thing is that I also like marshmallow topping or marshmallow flavor in things but I don’t like to eat marshmallows. Ok, now that you know one (of many) weird quirks I have, let’s get back to these tasty s’mores cookies…
I thought it would be fun to take these delicious s’mores cookies on our family 4th of July camping trip and serve them on a DIY s’mores bar. I knew that everyone would want to make traditional s’mores around the fire and I have been dying to use this cute sign from JoJoMiMi so making this DIY bar seemed like a great idea. Since I don’t like s’mores, I definitely wanted to bring the s’mores cookies. I made to enjoy with everyone around the fire.
Serving them on cute wood planks seemed rustic and fun. Using a linen table cloth didn’t seem fitting. Since we were out in the woods I loved how casual brown kraft paper looked. I wrote out the names of everything and set those things next to it. For our s’mores we used gluten-free graham crackers from Kinnikinnick but Pamela’s Products also has really delicious ones. Everyone loved the traditional s’mores bar and I think the s’mores cookies were a bit hit too.
When putting together your own s’mores bar, just remember that sometimes, simplicity is best. Grab one or two wow pieces like the sign and the wood planks then keep everything else minimalistic. Here’s to soaking up the last days of summer and Happy National S’mores Day!
- 3 1/2 C gluten-free all-purpose flour
- 2 C crushed graham crackers (I love Pamela's Products brand)
- 2 1/2 C sugar
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2 tsp. gluten-free vanilla
- 4 eggs
- 2 C butter
- 1 1/2 C chocolate chips
- 1 bag mini marshmallows
- Preheat the oven to 350°. Cream butter and sugar. Mix in the vanilla and eggs. In another bowl, combine all dry ingredients then slowly add them to the butter mixture. Fold in the chocolate chips and marshmallows. Using a cookie scoop, place cookies on a silicone mat lined (or greased) baking sheet. Bake 8-9 minutes or until golden brown. Cool and enjoy!
