Our easy gluten free quiche starts with a flaky & buttery pre-made gluten free pie crust but you can easily make a homemade version as well. This creamy egg filled pastry is as delicious as the hometown bakery and so good that you can serve it to everyone whether they are gluten free or not. And good news, it can be made in under an hour!

I love a simple breakfast that looks like you put a lot more effort into it than you did and this quiche is just that. It is both delicious and beautiful. We make ours with ham, cheddar and green chilies but you can get creative and add bacon, onions or even sweet corn and lobster like we did for a Nantucket themed dinner party.

- The flavor possibilities are endless: The creamy center is soft and totally customizable. I have made it with ham, green chilies and cheese but I have also made it with a coastal flair using buttered lobster, basil and sweet corn filling. Bacon and chives are another combination we've made and everyone loved it!
- Oh how easy this dish is: One bowl is all you need to pull this quiche together. I love that while the presentation is gorgeous and bakery case worthy, this recipe really couldn't be more simple to make.
- It is easy to make allergen free: I have made this with my dairy free cream instead of half and half and it turned out great which is wonderful for those of us who also need dairy free in addition to gluten free.
Here's what you will need to get started
- The base: The key to a good quiche is a flaky, buttery crust. While you can absolutely make a homemade gluten free pastry like we do in our gluten free toaster pastry, we make this extra simple for you by just recommending a pre made or semi-homemade option. You can go frozen or use a gluten free boxed mix. Just find something you love and know turns out great every time. My favorite boxed mix is this King Arthur gluten free pie crust and works great every time. We also have an amazing recipe in our cookbook.
- Wet ingredients: I found that using room temperature eggs and half and half that isn't right from the fridge makes it even easier to get the two to combine better. I will say though, if you forget, cold works as well.
- Your fillings: In this recipe we recommend two cheeses, ham, green chillies and green onions which is of course delicious. However, taking fresh lobster and tossing it in some butter in a frying pan with some basil and fresh corn until cooked through also makes an incredible filling. You can really go with anything. We've used bacon, cooked sausage, and all different kinds of veggies.

My pro tips for making this even easier
- You can freeze the quiche once you've added the filling so you can pop it right out and bake it whenever you want.
- Save extra pie dough and make cinnamon crisps like my mom used to for a delicious sweet treat to serve with the quiche. I just add cinnamon and sugar to the top of raw pie dough and bake them up. I like to call them sweet pie chips and they are delicious!

Easy Gluten Free Quiche
Ingredients
- 6 eggs
- 1 cup half and half
- 4 ounces ham, diced
- 4 ounces diced green chilies
- 1 cup cheddar cheese, shredded
- ยฝ cup pepperjack cheese, shredded
- 3 green onions, diced
- ยฝ teaspoon salt
- ยผ teaspoon black pepper
- 1 gluten free pie crust, unbaked
Instructions
- Preheat oven to 350 degrees
- Roll out gluten free pastry crust with a rolling pin into a circle then place in pie pan and crimp edges
- Whisk eggs well in a medium sized bowl then add half and half and continue whisking until well blended
- Add all other remaining ingredients and give a quick whisk then pour into unbaked gluten free pie crust and bake for 40 minutes until toothpick in center comes out clean
