These jack o lantern quesadillas are so fun! They take under 10 minutes to make and the kids (and picky eaters alike) will love this on Halloween night.
With simple ingredients like flour tortillas and less than a cup of cheese, you will have the cutest pumpkin quesadillas. You can even cook them in the air fryer and top them with sour cream and hot sauce for a bit more pizzaz.

These spirited quesadillas are the most simple meal you could make that will put a smile on your little ghoul or goblins face. They make a great October school lunchbox item as well.

Can you make dairy-free quesadillas?
To make this fun Halloween food and cheese quesadillas dairy free, just use a dairy free shredded cheese
We love using So Delicious or Violife dairy-free cheddar to make these quesadillas more suitable for those who can’t eat milk. They are made with clean ingredients and tastes better than any other brands we’ve tried.
If you need more dairy-free Halloween treats, I recommend you give Meaningful Eats chocolate almond flour sugar cookies a try since you only need to use dairy-free butter to make these work.
Can you do different shaped eyes and mouth?
Absolutely! This is a great time to get creative with this halloween recipe. You can make circle, square or triangle eyes and a happy or sad mouth using a paring knife on your jack-o-lantern face.
They are great served up with Half Baked Harvests chocolate stuffed jack o lantern cookies. Just be sure to make the needed adjustments if you need to make them gluten-free.
How to make jack o’ lantern quesadillas
- Stack 4 corn tortillas on top of each other then cut out triangle “eyes”
- Cut out jack o’ lantern mouth in all of the tortillas using a sharp knife (get creative here with what you want your jack o’ lantern to look like)
- Spread a little butter, olive oil or cooking spray on the frying pan
- Place the four uncut tortillas on the buttered pan over low to medium heat and sprinkle cheese on top of each(you could also add refried beans for more substance before the cheese)
- Then gently lay the jack o lantern cut tortilla on top

Cook until cheese is melted (Do not flip your tortillas)
- Top with a baby dill pickle, green onions or celery leaves for the stem (or any other green veggie) andserve to a crowd on a large baking sheet
How do you store leftovers?
We don’t recommend storing leftovers as they are best fresh. However, they can be refirgerated and reheated in the microwave for 30 seconds.
What else do you serve at a Halloween party?
I LOVE holiday gatherings! It gives you an opportunity to be with your favorite people and serve up delicious themed food.
We’ve done a bunch of different get-togethers for Halloween with lots of great ideas. Some of my favorites are our Halloween sandwiches at our witches night out.
We serve Halloween mocktails and Spider Chocolate Chip Cookies. For the savory stuff, Halloween Meatloaf with Ghost Potatoes is always a hit.

Ingredients
- 8 corn tortillas
- 2 C yellow cheddar cheese
- 1 tsp butter
- celery leaves or dill pickles (garnish)
Instructions
- Stack 4 corn tortillas on top of each other

These are so cute!! I made them for my kids (not telling them about how they would be jack-o-lanterns) and they cracked up! They thought they were so funny and of course, so tasty. I am all about Halloween, so this was a really fun way to celebrate the spooky season.
